Jumbo Stuffed Shells
This is my favorite "ricotta" cheese recipe that is good in lasagna, eggplant casseroles, stuffed large shell pasta or cannelloni pasta--anything that needs a ricotta cheese-like stuffing. As a variation, you could leave out the fresh basil and add taco-type seasonings then add to an enchilada layered casserole or a topping on tacos, etc.
Ceasar Salad With Maple-Wheat Croutons
This is my favorite Caesar salad dressing. My non-vegan friends ask me to make it when we get together for dinner parties. I used to make the dressing with oil, but discovered if I double the ingredients and leave out the oil, it still tastes great and is even healthier. When I was using the oil, I would add it last, pouring it in slowly with the blender running on a low speed. Once added, then I would blend on high until very smooth.
Potato and Cauliflower Samosa Patties
Delicious and well received by vegans and non-vegans alike. Be sure to have chutney as a condiment.

No Cheese Sauce
This recipe is from one of my favorite cookbooks, Forks Over Knives - The Cookbook by Del Sroufe. It's a fast and easy cheese sauce. Delicious for mac 'n cheese, kale chips, sauce for Buddha bowls, enchilada casseroles, and more. Super easy. Best with a high speed blender to make it very smooth.
Roasted Cauliflower Bites With "Queso"
This is my favorite vegan queso recipe--the cauliflower bites are really delicious as well. It makes a great appetizer and fun food for kids. I have served this at parties and even hard core cheese lovers say they will never use that melty, yellow cheese again for queso!
Fennel Citrus Salad
One of my favorite light summer time side salads. So simple to make and very delicious. Add some rinsed canned garbanzos for added protein. The source at the bottom of the recipe shows a short video demonstration. You can leave out the olive oil sprinkle-as this salad has plenty of flavor and richness from the Kalamata olives.
BBQ Pulled "Pork"
Delicious recipe for a BBQ pulled "pork" sandwich. Serve with pickles, sliced onion and mustard and some baked sweet potato fries. Also check out Upton's brand of BBQ jackfruit. Just heat and serve for a fast dinner time meal. I added a bit of organic ketchup for a bit more sauce. Available in most health food stores and Amazon.
